Quinoa Breakfast Bowl

Quinoa for breakfast? Absolutely! As a person who really doesn’t like oatmeal, I’ve long been looking for a suitable substitute. When I cook quinoa (which is really quick and easy), I make a lot more than I need so I have leftovers for breakfast, lunch or another dinner. It’ll keep for a week in the fridge, so try it!

This quick and simple quinoa breakfast bowl is full of protein, to keep you full and energized through the morning.
Ingredients
  • 1/2 cup cooked quinoa
  • 1 pat butter
  • 1 tablespoon brown sugar
  • 1 1/2 teaspoon cinnamon
  • Strawberries
Instructions
  1. Put the butter on the quinoa and heat until warm or hot to your liking. Sprinkle in the sugar and cinnamon and mix up, then top with strawberries. Voila! Super simple weekday breakfast!
  2. Never cooked quinoa? It’s easy! I recommend getting it from the organic bulk food bin, rather than a box. You’ll need 2 cups of water or broth for each cup quinoa (if you are using your quinoa for multiple dishes, I recommend just using water). RINSE YOUR QUINOA! First put the grain in a sieve and rinse it well – if you don’t, it tends to have a soapy flavor. Then, place it in a pot with a tight fitting lid, with the water and a pinch of salt. Bring to a boil, lower heat, cover and simmer for 12-15 minutes, until all the water is absorbed.
